I Made a Coconut & Butterscotch Entremet and Now I Can’t Eat Normal Cake
Let's be real—regular cake just doesn't hit the same anymore. I’m Sanath, and as a culinary student at WGSHA, my life is a constant cycle of intense kitchen prep, heat, and high-pressure plating. In this post, I’m breaking down exactly how my duo survived a chaotic bulk prep session to construct and plate a multi-layered Coconut and Butterscotch Blancmange Entremet that completely altered my dessert standards forever.

I wiped the sweat off my forehead and just stared at the gleaming surface of our latest plated dessert right here in the WGSHA kitchen. In this post, I am going to break down exactly how my partner and I pulled together a complex Coconut and Butterscotch Blancmange Entremet under pressure.
While our class tackled the initial component prep collaboratively to manage the sheer number of elements, the final plating was an intense test executed by individual teams of two. It was entirely up to my teammate and me to bring all those moving parts together into one cohesive, stunning plate.
The dessert itself is a visual showstopper, cleanly wrapped in a striking patterned Joconde sponge. The entremet sits proudly atop an artistic splash of simple mango sauce, which adds a vibrant, tropical pop of yellow to the plate. But what really elevates this dish is the aroma; before your spoon even breaks the surface, I made sure you are hit with a beautiful floral scent. That fragrance comes directly from the delicate white swipe of cardamom crème resting perfectly on top of the dessert.
The flavor profile is all about balancing heavy richness with bright, aromatic notes. The core of the entremet is a delicate, creamy coconut blancmange. That smooth base is crowned with a rich, glossy butterscotch jelly layer. However, to keep the sweetness from becoming overwhelming, we utilized a vibrant orange zest crumble that is scattered right alongside the base of the sponge. The mango sauce ties it all together with an extra hit of fruity acidity.
When I finally took that perfect bite—the creamy coconut, the deep caramel notes of the butterscotch, the floral hit of the cardamom, the sweet tropical mango, and the sharp, crunchy citrus punch of the orange zest crumble—it completely took over my palate. Pulling off a multi-component dessert like this with a partner is exhausting, but seeing that perfect plate sitting on the pass makes every single second worth it.
